October is National Pork Month, but there’s a pork recipe that’s perfect for any time of the year. There’s also room for pork in a balanced diet; eight pork cuts meet the U.S. Department of Agriculture’s guidelines for “lean.”
Here’s a luscious entrée from the National Pork Board, which shares a wealth of other pork recipes on Yummly.
Boneless Pork Loin Roast with Herbed Pepper Rub
3-pound boneless pork loin roast
2 tablespoons cracked black pepper
2 tablespoons grated Parmesan cheese
2 teaspoons dried basil
2 teaspoons dried rosemary
2 teaspoons dried thyme
¼ teaspoon garlic powder
¼ teaspoon salt
Preheat oven to 350°.
Use a paper towel to pat pork dry.
In small bowl, combine remaining ingredients well, and apply to all surfaces of the pork roast.
Place roast in a shallow pan and roast for 1 hour (20 minutes per pound), until internal temperature on a meat thermometer reads 145°.
Remove roast from oven; let rest about 10 minutes before slicing to serve. Makes 12 servings.
