Here's a fresh, springtime salad using spinach right out of the garden.
Spinach, Cheddar and Apple Salad
6 cups spinach, torn
1 apple, cored and diced
1/2 cup reduced fat cheddar cheese, shredded
1/4 cup onion, minced
1/4 cup sunflower seeds
1/4 cup olive oil
1/4 cup apple cider vinegar
3 tablespoons honey
2 teaspoons Dijon mustard
1/4 teaspoon ground black pepper
Add spinach, apple, cheese, onion, and sunflower seeds to a mixing bowl.
In a separate bowl, whisk together oil, vinegar, honey, mustard, and pepper. Pour over the salad mixture and toss together.
